Cookin’ with Carolyn Penne with Spicy Vodka-Tomato Cream Sauce

Penne with Spicy Vodka-Tomato Cream Sauce
1 Tbsp. olive oil
1/2 lb. spicy Italian sausage
4 cloves garlic, minced
1 (28-oz.) can low-sodium crushed tomatoes
1/2 tsp. salt
1 lb. penne pasta
1/2 cup whipping cream
2 Tbsp. vodka
1/4 cup chopped fresh parsley
Heat oil in a large, deep skillet over medium heat. Add sausage; cook, stirring and breaking up lumps, until browned, about 5 minutes. Stir in garlic; cook 1 min. Stir in tomatoes and salt, then bring to a boil. Reduce heat and simmer, uncovered and stirring occasionally, 15 min. Meanwhile, cook pasta according to package directions; drain.Stir cream and vodka into skillet and bring to a boil. Reduce heat to low and add pasta, stirring until well coated. Stir in parsley.
