Cookin’ with Carolyn Pumpkin Chip Cookies

1-1/2 cups butter, softened
2 c. packed brown sugar
1 c. sugar
1 large egg, room temperature
1 tsp. vanilla extract
1 can (15 oz.) pumpkin
4 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 c. quick-cooking oats
2 c. (12 oz.) semisweet chocolate chips
Preheat oven to 350 degrees. fran, cinnamon and salt; gradually beat into creamed mixture. Stir in oats and chocolate chips. Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until lightly browned, 10-12 minutes. Remove from pans to wire racks to cool. Makes about 10 dozen.
