Cookin’ with Carolyn Pumpkin Pie Squares

An alternative to pumpkin pie – Pumpkin Pie Squares
Grease 9×13 pan
1 yellow cake mix (reserve 1 cup cake mix for top)
1/2 c. melted butter
1 egg
Combine remaining cake mix, melted butter and egg. Press into bottom of pan
Filling:
3 cups (1 lb. 14 oz.) Libby’s pumpkin pie mix
2 eggs
2/3 c. milk
Combine and mix til smooth. Pour over crust
Topping:
1 c. cake mix
1/4 c. sugar
1 tsp. cinnamon
1/4 c. butter
Mix. Cut in until all crumbly. Put on top. Bake 350 degrees about 45-50 min. Cut into squares. Enjoy!
Note: Be sure to use pumpkin pie filling – not plain pumpkin.
