Cookin’ with Carolyn St. Patrick’s Day Green Punch
1 qt. lime sherbet
2 cups pineapple juice
4 cups lemon-lime soda (such as
Sprite or 7-up)
1 Tbsp. lime juice
fresh mint leaves for garnish
In a large punch bowl, combine the pineapple juice and lime juice. Scoop the lime sherbet into the punch bowl, breaking it into chunks as you go. The sherbet will begin to melt into the juice creating a frothy, creamy texture. Slowly pour in the lemon-lime soda, stirring gently to combine. The punch should become bubbly and frothy. Garnish with fresh mint leaves for an extra touch of green. Serve immediately in glasses with ice or refrigerate until ready to serve.
