Brandied Fruit Sauce

A good topping for pound cake or whatever.
1 C. unsweetened apple juice
2 Tbsp. honey
1 tsp. cornstarch
1 Tbsp. water
1 (16 oz.) can sliced peaches in juice, drained
1-1/2 c. ripe banana (about 2 medium)
3/4 tsp. brandy flavoring
3/4 c. fresh or frozen raspberries, thawed
Combine apple juice and honey in a saucepan;
bring to a boil stirring constantly. Combine
cornstarch and water; add to juice mixture.
Cook over medium heat, stirring constantly,
until slightly thickened. Remove from heat;
stir in peaches, banana, and brandy flavoring.
Gently stir in raspberries. Serve over angel
food cake, fat-free pound cake or ice milk,
Yield:: 3-1/2 c.
