Cookin’ with Carolyn White Chocolate Macadamia Nut Muffins

2-1/2 cups all-purpose baking mix
1/2 cup sugar
3/4 cup coarsely chopped white chocolate
(like Baker’s Premium white chocolate)
1/2 cup coarsely chopped macadamia nuts
3/4 cup half-and-half
3 Tbsp. vegetable oil
2 tsp. vanilla extract
1 large egg, lightly beaten
Combine baking mix and sugar in a large bowl;
stir in chocolate and nuts. Make a well in center
of mixture. Combine half-and-half and remaining
3 ingredients; add to dry ingredients, stirring just
until dry ingredients are moistened. Spoon into a
lightly greased muffin pan, filling two-thirds full.
Bake at 400 degrees for 11 to 12 minutes or until
a wooden pick inserted into center comes out clean.
Remove from pan immediately. Yield: 1 dozen.
