Cookin’ with Carolyn Potato Soup with Ham

4 bacon slices
1 small onion, chopped
2 c. half-and-half
1 (14 oz.) can chicken broth
1 (1-pound, 4-ounce) package refrigerated
mashed potatoes (like Simply Potatoes)
1 (12 ounce ) package diced cooked ham
(like Hormel),
1 Tbsp. chopped fresh thyme
1/4 tsp. pepper
1 c. (4 ounces) shredded sharp Cheddar cheese
Cook bacon in a Dutch oven until crisp; remove
bacon, and drain on paper towels, reserving
1 Tbsp drippings in pan. Crumble bacon, and
set aside. Saute onion in reserved drippings over
medium heat until tender. Stir in half-and-half
and next 6 ingredients.; bring to a boil. Reduce
heat, and simmer 5 minutes. Top each serving
evenly with bacon.
Yield: 7 cups.
